I remember coming home after playing outside in the snow; with red cheeks, cold fingers, tired and starving (Hank Marvin). Mum would help me out of my winter clothes, wrap me in a blanket to warm me up and then she would give me cocoa soup. It was such a lovely treat and it always put a smile on my face.
The cocoa soup is essentially a dessert, but mum occasionally served it as a main dish.
I got this recipe from the book “Matur og Drykkur” by Helga Sigurðardóttir, and I just adjusted it slightly. The copy my sister has, she gave to my mum for her birthday in 1976. It´s such a beautiful copy, which looks like its been used over and over again. I think this book has been republished and I might invest in a copy for myself.
Icelandic cocoa soup
Ingredients
- 3tbsp coca powder
- 3tbsp sugar
- 250ml water
- 1litre milk
- 1tsp vanilla essence
- ¼ salt
- 2tbsp corn flour
- 100ml water
Instructions
In a medium saucepan, whisk together the coca powder, sugar and water. Bring to the boil, and allow to simmer for 5 minutes.
Then add the milk, vanilla essence and salt; only bring to a boiling point.
Mix the corn flour and water together, and stir into the soup with a whisk. Continue stirring until the soup starts to thicken.
Serve the coca soup hot with rusk and whipped cream (optional).
